Then you need to cool the fruits and dry them in a steam dryer. Thanks to this, it is possible to preserve the contained nutrients as much as possible.

The drying process also has its own characteristics. At the initial stage, the plums are dried for 3-4 hours (temperature 45-50 ° C) until dried, and then the next 1-2 days at a temperature within 60 ° C until fully cooked. In order for dried fruits to acquire their characteristic dark color, immediately before the end of drying, the temperature is increased to 100 degrees or more for 2-3 minutes. Due to this, the sugar contained in the pulp will come to the surface of the prunes and caramelize, which will give a characteristic shine. When you see a slightly white bloom, you can talk about the complete readiness and high quality of dried fruits.

Prunes are more often obtained from plums of the Renklod, Hungarian, Stanley varieties. Plums can be dried with or without pits. But when drying with bones, a maximum of useful substances will be preserved.

Rules for the selection of prunes and their storage
